Abstract

The subject of this work was to determine the rate constant of the glucose mutation reaction without and in the presence of a catalyst. Based on the results of polymetric measurements, it can be concluded that the rate constants of the mutarotation reaction in glucose solutions of different concentrations are of the same order of magnitude. Also, the rate constants of the glucose mutarotation reaction in solutions of different concentrations in the presence of ammonium hydroxide are of the same order of magnitude. By comparing the glucose mutation rate constants, it was observed that the glucose mutation rate constant in the presence of ammonium hydroxide is significantly higher. Increasing the rate constant of the mutarotation reaction under the influence of ammonium hydroxide shows that it is the catalyst of this reaction, i.e., that it increases the rate of the glucose mutarotation reaction. Higher rate constants of glucose solution mutarotation in the presence of catalysts prove that in glucose solutions, in the base medium, the balance between  and  forms of glucose are established faster in relation to glucose solution without catalyst, whereby faster optical stability of the preparation is achieved.
