Abstract

The paper emphasizes the importance and considers the most important requirements of the Prerequisite Programs (PRPs), so-called Good Manufacturing Practices (GMP) and Good Hygienic Practice (GHPs). Their proper implementation, consistent application and continuous improvement are the basis to fulfilled the requirements of modern food safety management systems (FSMS).
